late night baked salmon

This is a flavorful and nutritious one-pan meal that you can whip up in just 20 minutes!

Seafood is my go-to source of protein whenever I get home late from work and need a quick meal. Normally, I'd reach for the soy, garlic, and honey, but one night, I decided to take a lighter route and make a dill sauce instead. It surely did not disappoint! In fact, I'll be using this sauce more often -- especially because it contains way less sugar.

This salmon pairs well with a side of quinoa, potatoes, and/or greens. Broccolini caught my eye in the grocery store the other day, so I went with that, and it was the perfect side to a light meal.


Ingredients

  • 1 pound wild-caught Alaskan salmon fillet (cleaned & patted dry)

  • 1/2 cup unsalted butter (melted)

  • 2 cloves garlic (minced)

  • juice of 1 lemon

  • 1 tablespoon dried dill weed

  • 1 teaspoon ground black pepper

Directions

  1. Preheat oven to 350 degrees Farenheit. Lightly grease medium baking dish.

  2. Place salmon in baking dish skin side down. Mix butter and lemon juice together. Drizzle evenly over salmon.

  3. Mix garlic, dill, and black pepper together. sprinkle evenly over salmon.

  4. Bake for 30 minutes, or until salmon flakes easily with a fork.

  5. Serve hot alone or with a side of your choice.
