oi muchim (Korean spicy cucumber salad)
This one of my favorite banchan dishes and it’s SO easy to whip up.
Ingredients
- 1 Korean cucumber, thinly sliced ( I use regular cucumbers too) 
- 1 tsp salt 
- 1 tbsp Korean chili pepper flakes 
- 1 scallion, minced 
- 1 clove garlic, minced 
- 1 tsp rice wine vinegar 
- 1 tsp sesame oil 
- 1 tsp sesame seeds 
Directions
- Toss cucumber slices with salt and set aside for 10 to 15 minutes. Drain any excess liquid. 
- Mix all ingredients together until cucumbers are well coated. Chill until ready to serve.
