pink radish soup
How can you not like this pink soup?! Radishes have a crisp spice that shines beautifully in this creamy soup. It’s wonderfully refreshing for the season since it can be served either hot or chilled.
Ingredients
- 1 tbsp butter 
- 2 cloves garlic, smashed 
- 1 small onion, chopped 
- 8-10 radishes, quartered 
- 2 radishes, julienned 
- 1 tsp paprika 
- 1 tsp white pepper 
- 1/2 tsp black pepper 
- 2 cups oat milk 
- Optional toppings: mint leaves and Greek yogurt 
Directions
- Melt butter in a saucepan over medium-high heat. Add garlic and onion. When garlic is lightly browned, stir in chopped radishes and spices. Cook until they are 50% translucent. Carefully mix in oat milk, cover with lid, and let simmer for 15 minutes. 
- Remove lid and use an immersion blender to purée everything until smooth. Let simmer for another minute or two. 
- Serve hot or chill in refrigerator when cooled. Top with, julienned radish, mint leaves, and a tablespoon of Greek yogurt. Enjoy!
