sukju namul (bean sprout salad)

Sukju namul is a refreshing and popular Korean side dish that helps to mellow out the kicks we usually get from the spicy dishes I make.

Ingredients

  • 1 lb mung bean sprouts, rinse and drained

  • 1 scallion, minced

  • 1 clove garlic, minced

  • 1 tbsp sesame oil

  • 1 tsp sesame seeds (Optional: toasted)

  • Pinch of salt & black pepper

Directions

  1. Fill a medium saucepan halfway with water and bring to a boil. Prepare an ice bath in a large bowl. Carefully add sprouts into boiling water, cover, and let blanch for no more than 1 minute. Drain immediately and transfer sprouts to ice bath for 30 seconds. Drain and squeeze out excess water.

  2. Toss sprouts with remaining ingredients.
